The last few days, MMO-Champion.com has had quite a few updates on Cataclysm - including some new profession info as well as plenty of model updates. You can find the Profession updates here.
The latest beta build has included a change to the mounts and companion pets spellbook pages and new loading screens for a few places (Kalimdor, Northrend, Eastern Kingdoms, Outland).
Tol Barad, an outdoor pvp zone in which you gain access to dailies based on faction control, is now availible for testing as well along with some of the items you can earn from there; Class Masteries and Armor Specializations have been enabled, and the UI for Holy Power has been updated as well.
Thrall has had his model updated (Finally loooool), and they've updated Nemesis' model (big lava turtle in Hyjal), which looks really cool.
I think the coolest thing in the new beta build has to be the guild reward items. So far, there's a lot of placeholders and I'm sure there will be more items, but this should give you a pretty good idea as to what they'll be about.
